This includes, but is not limited to; "Ability Score Type" (choosing 2 ability scores and having the result be based on the higher score) "Save Type" (Having an indicator in the sheet that the target chooses which save) "Dice Count/Die Type" (appears in the sheet in the same way a versatile weapons damage appears in the sheet) "Damage Type" (For when the player chooses what the damage type is from a set list)
All of these values having multiple different inputs will benefit both existing real abilities in 5e, as well as homebrew. Please, i need this in my life.
Definitely agree about ability score and versatile types.
The damage type just goes in the description though, so I'm not sure where you even expect to see the change. And I don't think there are any actions that let the target choose which save to use.
im think some maneuvers allow different saves, i know that grappeling lets the target choose between acro/athlet. ive made a few homebrew abilities that let the target either try to dodge or stand their ground (dex or str) so i would appreciate the addition at the least.

Grappling uses skills not saves, and it just goes in description. The maneuvers only use one save. I don't think there are any official skills that use 2 saves. For your homebrews, I recommend leaving the save blank and putting it in description too.
It wouldn't be a bad idea for when they improve the homebrew tools I guess.
