I like them both as a player and DM. The best of the activities offer the opportunity to create a foil. The worst I'd say are in the DMG about building structures.
My paladin does religious service every major town we hit to try and recruit followers to his deity who is pretty much unknown in the land we are travelling in. Has been a lot of fun actually and I'm building quite a following, my character's goal is to eventually have enough followers to build a temple.
In this case I'm the DM, I would be of the opinion that I'd like to roleplay some of it, and just elide the details on some too. Basically montage it I think with some player spotlight. I was just looking to get a feel of other DMs experience with it.
I don't usually do much out of the books for between adventures. Instead, I like to make "distractions" for the players, like:
- a card den (one of my players wouldn't stop talking about his 'proficiency with playing cards').
- My campaigns lean towards monster slaying, so I let my players learn crafting so they might be able to use items like werewolf pelts or dragon fangs that they insist on taking ( I homebrewed our rules for crafting to balance it out a little).
- My party has a castle they like to invest in to add new rooms or servants and the like.
- Every town of mine also has a notice board for monster slaying contracts, so the party can take one or two whenever they get some free time.
