In a party of 6 level 20 characters, would epic boons be good to give to the players, or would they steam roll a CR 30. I was thinking of using the homebrew version of these monsters that go past CR 30 to things like CR 35, but I'm not sure if epic boons will make it too easy, or if it will be a TPK.
I'm not sure what you mean. I'm talking about the list of Epic Boons on page 232 of the DMG. All of those seem balanced for normal play at higher levels. If you look them over and pick out one for each party member, you should have a solid idea of the power boost they are getting and how it will affect the game moving forward.
Just now getting into dealing with epic boons in one of my bimonthly groups. I view they as a level when thinking about CR. So far that has worked, at 20th plus level, acualy a few levels before that, I stopped worrying to much about them getting steam rolled. If it gets to bad they have plenty of time and ways to get out of trouble. As far as them steam rolling anything they do that a lot, but I also don't believe that just cause your level 20 you stop seeing orcs, or even bandits.

Epic Boons are sort of meant for use with those sorts of characters so.....yes, it should be fine to hand them out as rewards.
