Hello, I am hoping someone may help me, i am planning an encounter where the party is hunting a Chimera. The Chimera is stealing food from nearby towns and hoarding it in its field.
Can I get some tips? Maybe the kind of minions it may have?

What level is your party? If they're below 6th level, as the chimera is CR6 I'd probably just leave it at that. If you think they can handle it, then you could easily add a few kobolds into the mix who follow the chimera's dragon head.
Or take advice from the monster entry - perhaps the chimera is a pet to some larger villain, which will give a bit of a surprise to the PCs. Perhaps the chimera is kept in a compound with some lower level lackies who keep it well fed.
Following on the ideas above, I think making the chimera have some form of dedicated following would be interesting. Perhaps an entire goblin tribe worships the chimera as a god, making the beast's lair a series of small skirmish encounters that will force the party to conserve resources before taking on the chimera in a final confrontation. You could even have three distinct sects within the goblin tribe, one dedicated to each head. Perhaps they war with each other? Perhaps the party can turn the Tribe of the Lion Head against the other two to help buff their chances.
How about someone fairly weak having control of the chimera? Like, an evil wizards apprentice found it as a ... 'cub'? ... and nursed it to health and maturity. Still a weak wizard, it would still make sense for players to consider the mage the primary threat - either wasting energy on him or her, or chasing after as they run and hide.
It's too dumb and aggressive to have minions - to me - but maybe there's more to the story. Why has the chimera come to populated lands to eat? Maybe it was driven out by .. I dunno, a tribe of ogres? That doesn't really change the encounter, though. What if some psionic creature controls it? Like, a brain mole? I like that idea: A brain mole randomly encountered a chimera, and is using it's Suggestion ability to control it, getting free food and a top notch guard for it's lair. The players are unlikely to notice the tiny rodent pulling the chimeras strings. They may eventually notice it's psionic drain attack =)

Blanket disclaimer: I only ever state opinion. But I can sound terribly dogmatic - so if you feel I'm trying to tell you what to think, I'm really not, I swear. I'm telling you what I think, that's all.
I am pretty sure that in the description it says that the chimera might attack a party and retreat to regain strength and confuse the party before attacking again. Have the chimera attack the party and leave once it is wounded, have it heal slightly, and it leads them to a new hazardous battleground. This causes the party to fight through several areas that could have interesting hazards and they will have to be careful of their resources.
For minions, I would think that a monster like a chimera would scare away or kill most natural wildlife. They also don't seem intelligent enough to purposefully employ minions. Maybe there is another monster though that is challenging the chimeras territory and the chimera first leads the party to its enemy in an attempt to get rid of its enemies. Then, when the party has finished fighting the other enemy and have used up some of their resources, they would be attacked by the chimera.

Its a mix of 5-9s. Plus, just having a chimera is not great. Easily gets decimated by a caster and fighter
