So I got A Barbarian/Paladin about to fight a gladiator, a Monk about to get into a situation with 2 wererats 2 giant rats and a swarm, and a rogue about to go solo with a master thief. Is all this too tough? Up till now they have been crushing every combat encounter.
If you want to make the encounters tougher, double their HP, so that they can soak a few hits. The only fight that looks like it might be unbalanced is the monk vs the rats. What's your monk's AC? +4 to hit vs level 10 seems kindof low, for most cases, and he can drop up to 3 enemies in the first round because nobody's HP pool is bigger than 30.
I'd say it isn't too tough--the player characters will likely win after taking a few big hits. As Diplomacy mentioned, it seems that the Monk is probably in the least danger. I'd recommend combining the two wererats into some sort of a "wererat king/queen" and use a re-themed weretiger's stat block instead.
I actually recall seeing a game where an 8th level barbarian solo killed a gladiator--so your 10th level multiclassed PC might just crush this encounter as well.
