You could use the NPC stat blocks from the monster manual or phb, and there are a ton of free homebrew ones you can find on the internet. I wouldn't use actual player character rules for making that many npc's, as a lot of the work you'd put in would be irrelevant or redundant, and if it ever did come to combat between them, it would be unbalanced as DND isn't balanced for PVP.

There is a generate random character button in the builder. It can give you some really strange stuff, but might fit the bill for you.
Though in general I agree with charlestheplant about not using a PC build as an NPC, if this is a purely social situation it may work.
