That's kind of an impossible question to answer because it entirely depends on your players. I know people who would quite happily spend 8 or 9 hours on a single combat as you throw wave after wave of enemies at them and others who would be complaining they were bored by round three of the first wave
It does depend on how long you expect the overall combat to go on for, how long you expect your player's resources to last and how long you expect your player's patience to last!
Personally I would probably stick to the "rule of three".
I'm currently working on a final boss and I have like 7 different minis I want to use as phases. Is that too much? Advice will be apreciated.
Probably? You want each phase to last long enough to showcase what that phase can actually do, which means at least 7 rounds of combat, and probably more like 10, and you want to give each phase some distinctive cool trick, and if 7 consecutive distinctive cool tricks doesn't kill the party... they probably aren't very impressive.
It's very rare to have more than three phases for a boss fight.
