I wouldn't. For one thing, Nothics were originally human wizards who bit off more than they could chew and got corrupted, so it's still a roundabout form of cannibalism. If they insist I'd say it might be fun to make a show about how it smells like a rubber tire full of rotten fish on fire and produce a lot of unpleasant smoke, and if they insist on eating it anyway then go ahead and just poison them. Maybe give them a point of exhaustion as well, just to really hammer home that they shouldn't be trying to eat aberrations.
Although now that I'm typing it out, it might be fun to give a character proficient with cook's utensils the opportunity to harvest something of value from rare and unusual creatures... like eating a puffer fish. Maybe if someone can pass a DC20 INT check with their Cook's Utensils they can figure out how to boil the eyeball just right to get an edible stew out of it. But other than that I think it should be the equivalent of eating a bowl full of rotten eggs.
I think the eyeball would be the worst part to eat of the whole thing. They get some magic insight thing from them, so maybe the arms would work better.
well I had to look up the nothic, but I think that it might work well for them to get heightened vision abilities, but also take a certain amount of damage from something like the nothic's blood, which might be poisinous.

So my PCs killed a Nothic, and now the half-elf druid wants to eat it.
Should I allow it? Would Nothics be poisonous?
Any thoughts?
Sure why not. I would ask them if they are comfortable eating sapient species? Next, if you are using henchmen, you should be using henchmen, have them slip out of the party. Next, whenever the party enters a town, when they run into a NPC in the area give them a 10% roll of hearing of this disgusting player that ate intelligent life, maybe they won't let them rent a room or will ask them to please leave the store while hiding their kids. You did have the nothic talk a bit while using its stealth so they know its intelligent at least?
I love to let edgelord players learn that they are in a real world and their actions will have consequences. If they don't like it, then tell them not to be a disgusting freak at the table or make sure to kill everyone who watches them do their sick crap.

That eye is definitely poisonous and also the main thing associated with it's powers. It's brain is also likely cursed and also associated with magic. In some old school depictions of druids they would consume things to gain their power. Its possible that a druid would have some ritual to do so but the costs would be fairly great for taking part of a cursed creature into yourself and trying to tap into that curse for power.
To mimic that lore I'd make a ritual either using scroll mechanics where they have to make an arcana roll or they can use a spell slot of the appropriate level to have it succeed. I'd probably give both a positive and negative effect and if or some reason it fails they would only get a negative effect. They could choose either the brain or eye to eat depending on which effect they want and then make a roll. Any spell effect that makes seems like a nothic like spell would be appropriate but here are some suggestions.
Positive:
The effects of the truesight spell
The effects of speak with dead on the nothic
Adding a spell to spells known
The effects of legend lore
the temporary ability to use weird insight
the temporary ability to use rotting gaze
for negative effects:
visibly age or mutate
objects you look at rot and disintegrate for the duration
loose some of your memories
gain a form of madness
poisoned for the duration
gain a disease
must make Constitution checks or be incapacitated for a round from vomiting
I'd also probably let a negative effect be removed with remove curse but it would take the positive effect with it if they do.
