There are optional rules on Sleep in Xanathar's Guide to Everything in Chapter Two: Dungeon Master's Tools, to reiterate an earlier point, ensure you discuss with the whole party that you'll be using these optional rules.
To paraphrase, wearing light armour for a long rest/sleep is fine but medium and heavy only allow you to regain a quarter of your spent hit die and doesn't reduce Exhaustion.
This may not be exactly what you're looking for but it does provide a reasonable incentive to doff your armour each night
Plate Armor is not as restrictive as many people think. An average healthy person would have no issue moving around in plate for a few hours in town. They also would be able to sleep long enough for the benefits of a long rest if tired.
Plate armor requires 15 strength. This places the people wearing it WELL ABOVE average strength. They have the stats, their armor isn't an issue for them.
Exhaustion rules are WAY overblown and are a horrid penalty for the hard work of being able to equip and having the money to purchase good armor.
No, you can move around pretty well in plate, but sleep? It’s less “could you” and more “no one does unless they’re super paranoid.” The only character in any fantasy story I distinctly remember sleeping in armor is Denethor from Lord of the Rings, who wore a chain shirt under his outfit. (So did Frodo and Gimli, but they were on a long quest with no change of clothes, so it doesn’t count. They didn’t wear them in town.) And I’ve never heard of anyone wearing plate. Denethor is the definition of paranoid. If you’re character is like him, go for it. Otherwise, you’re really just metagaming.
