One of our players left our campaign. In their last game they were in the vampire's lair with other players and they asked me if their character can be turned into the NPC vampire after they leave the campaign. I agreed and vampire successfully killed their character with all the rules of vampiric transformation, so the character was also buried and as soon as the new night came, they became the vampire spawn NPC. I want to make this character a true vampire later and here is the question: Should I keep the character stats (Human Fighter) or should I give them the Vampire's NPC stats?
I think you should keep the character's statistics, but augment them with the vampiric modifications presented in the Monster Manual. You can also convert the character sheet into a stat block, if you'd like.
I'd use the Vampire Warrior statblock that includes the Variant: Vampire Warrior option. Perhaps even customizing it further with some of the character's most reknown features such as Action Surge, Second Wind, Battlemaster Maneuver etc..as well as some of its weapon and magic item.
