This is really going to come down to personal preference and what you and your DM do with them.
Take Warlock, for example. With limited spell slots, they often get relegated to spamming Eldritch Blast once their other resources are drained, leading to a repetitive playstyle. However, with a solid DM, you can really explore that Patron-Player relationship, creating an entire complex story.
A Wizard, on the other hand, has a whole bunch of options always available to them. Some folks like that and find it fun… but if you are not intimately aware of your spells and what they do, you could suffer decision paralysis and make everyone else at your table suffer every time your turn comes up.
Sorcerers are probably the worst of the three from most analysis standpoints - Metamagic does not really compete with a Wizard’s flexibility, and the “born with this power” flavour generally does not create as interesting of stories as a Warlock’s contract. That said, they are a great multiclass for Warlock—they both are Cha casters and a Warlock’s short rest spell slots can help bank additional sorcery points—and you can use them to shore up some of the repetitiveness of Warlock.
