When I add experience to a character sheet, and the character levels up, I figured DDB would automatically add at least HP to the character. I take it that's not the case. Fine. And of course, there's all the class adjustments that need to be made, like specializations, spells, etc. Does anything adjust automatically? Is there anything that I need to specifically make sure not to forget that many might not notice?
Nothing adjusts automatically until you go in to Manage Levels and select the new level you've obtained. This is for a number of reasons, but with regrads to HP it is because of Multiclassing. Since different classes have different hit dice, the system doesn't apply HP until you select the level in that class. The same applies to single class characters. Select the new level in that class and it will apply the HP. Everything else that is modied with a level up will be indicated on the class editor page once the new level is applied.
Also, leveling up doesn't happen automatically in-game just because you've gained the necessary experience. Your DM won't (or shouldn't) halt combat to let someone level up. You continue to play at your current level and accrue XP until you have sufficient time to level up, such as a long rest.
Go to the character builder, class levels are managed under "Class". For multiclassing specifically there's an Add Another Class option at the bottom of the page.

By default, players are the ones who choose what feats, spells, subclasses, or other options for their characters as they gain levels. As GM, you are allowed to place restrictions like not letting content from a specific book be used, but that's something that should be discussed in Session Zero.

"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.
I selected the level and everything leveled up except HP, so I just rolled and added to the base number - but a previous comment makes it sound like the system should have done that on it's own, is that the case?

Go into the character builder and go to the *HOME tab and check if it is set to Hit Point Type - Fixed or manual. Fixed should add HP automatically. You might have it set to manual.

Yes it does. If it is set to fixed it updates HP. It also adds all new class features.
