For one thing, you can max out the HP instead of taking the average. Changing an attack action to a multiattack is another good way. If the story calls for it, you can give it some lair actions. It's a pretty open-ended question with lots of answers to fit different circumstances.
I just look at the monster in question and make adjustments to the numbers. Like HP, damage dice, and armor class for example. Do it enough times and it becomes fairly easy. You can use lower level monsters as a reference also.
