I'm running curse and when I went to show them Vallaki its has all the important homes highlighted in orange on the player content map, one of the players instantly pointed them out when I put it up on the TV.
I understand they are noticeable while walking threw the town, but when trying to show just a visual aid they then proceeded to just go to the orange buildings, in turn not discovering any random encounters etc.
That sounds like a DMing issue. Random encounters can happen on the way to the plot-relevant locations. Just because they have a destination in mind doesn’t mean they get there instantly with nothing happening in the meantime.
I know that if I were a player and my DM dropped me in a town with no points of reference, I’d be very frustrated.
So when you enter a town you expect to just know all of the locations and not explore at all? I mean there's even tables for the non important housing.. Sounds like a meat issue lol

When I played CoS, we went to every house (or at least several of them). Just because a building isn't the church, the inn, or the NPC's house, doesn't mean it doesn't have something that could be useful, be it lore or an item.

The important buildings are noticeably distinct because otherwise it would be very inconvenient for everyone. They aren't secret.

I dont know what train you're stuck on but DnD is an amazing sandbox, even when running a pre-made adventure.
