I'm thinking of starting a Weekly Oneshot type of thing, where we would have just a mini, one session story. It would probably vary week to week, but I'm sure I could them more roleplay or combat based if people preferred as well. If you have thoughts on the matter, if you could send me a message or answer the little poll, that would be great. Thanks y'all!
I think a series of loosely connected one shots is a nice way to play if you have frequently changing players or big downtimes (IRL) between sessions.
My friends and me usually get to play D&D roughly once per month and big, overarching campaign plots that take > 10 sessions often run out of steam and become boring half-way through.
Which is why I am now running a series of one-shot adventures that are strung along a prophecy they received. They won't save the world from the devil himself at the end, but they have the goal of reaching the other side of the continent and that leaves plenty of space for "adventure -> two weeks of downtime / travel -> next adventure" with constantly changing settings to keep things interesting.
So, tl,dr: I think that kind of play can be a whole lot of fun, but with weekly sessions you could also pull off bigger campaigns. ;-)
I would love to do something like that and I have a few friends who would be interested as well. If you end up putting it together please let me know. It's a great way to try out new builds and characters without having to commit to them.

Pretty sure TftYP was made with something like this in mind. AL is also like this sometimes.
There are loads of short adventures that are only intended for characters to gain 1 level at the end of it.
