I'm confused, are you using another race as a template? If you're making a race from scratch it shouldn't come with anything automatically, not even ability score increase or bonus damage.
Thanx for thinking along! Weapon actions require an ability score type (also for the to hit) ... cant find a way to remove the ability modifier bonus damage (as per the dual wield or off hand rule)
I don't think you can do this. The tools are built for adding official content and official content hasn't done anything like this (the weapon dual wield is a separate thing).

That's not quite true. Spells use an ability for the attack role but don't add it to the damage fairly frequently. Setting the drop-down to Spell instead of Weapon doesn't do what OP wants though, unfortunately.

Hi, I’m homebrewing a race with natural weapons, which can be used in off hand as well.
Build the trait, weapon, action and bonus action.
Somehow I cannot disable the ability modifier bonus damage...
anybody any ideas?

Used Tabaxi, but added bonus action in the trait. It shows correctly under bonus actions, but ads the ability modifier to the dice damage.
When you create an action, you can choose to leave the Ability Score Type blank by selecting - in the drop-down list.
