As the title of the thread suggests, I am on a self-imposed quest to play every class in the game at least once. Part of this is to force me to get out of my comfort zone and experience other classes that I may never have played before or considered my wheelhouse. It all began in Curse of Strahd, when I played 5e for the first time. I hadn't played D&D since 3.5e in the 2000s and even then only for two sessions and before that much of my time spent playing D&D was in AD&D in the early to mid-90s.
During that game, I played Ari Schödinger, my spy rogue, in the Death House. Sadly, Ari didn't make it out of that place alive (and neither did the rest of our party for that matter), but Ari's death gave rise to my new character, Axel Cage (a cross-between Axl Rose from Guns N' Roses and Johnny Cage from Mortal Kombat), and the first time I had played a Bard, a class I had often considered to be pretty weak, but was surprised by how powerful it was! Since then I have resolved to play every class, open my mind to what each could do, and was curious what some people would recommend as good picks for some of the classes I have left. I have some ideas, but figured I would ask around. The classes I have left are as follows:
Figher - Was thinking of playing an Echo Knight, Battlemaster, or Samurai
Cleric - Was considering Life, Light, Forge, or War
Monk - I was considering Way of the Astral Self, but it's UA. So maybe Open Hand?
Ranger - Gloomstalker seems really rad, but Horizon Walker could be fun in the right setting.
Rogue - Technically Ari didn't really survive long enough for me to consider myself having played one so I'd like to give this one another shot. Maybe Scout or Arcane Trickster. I was even considering a multiclass with Ranger.
As stated above, multiclassing is allowed. Side note, what level would people consider a class as being 'played'? I tend to default to questions like "Have I gotten the core ability or abilities of this class?" and "Do I have a subclass for this class yet?"
Cool! By your logic, I can stand by my list! For a fighter, I was always under the impression that Action Surge was kinda the big core ability of their class since it's unique to them. In that case, I suppose one could make the argument for Fighter 2 being a 'played' class. I could agree with Warlock as well, though again some would argue (in a half-trolling way) that the minute you have Eldritch Blast you've played a Warlock. In my opinion, I'd probably say Ranger would be 'played' if you advance to 3, especially since so many features of the Ranger class are unique to their subclasses.
I'd disagree with your assessment of Bard though. I think a Bard is played at 3. You have inspiration, jack of all trades, and your subclass abilities which really add something unique based on what you choose.
You did forget one though....Artificer. However, having played one, my two cents is that once you've hit level 3 that's a class that's been played. You have spellcasting, infusions, and your start of your subclass abilities. Also the Artificer I played got to level 11, so that's definitely played!

I think subclass or defining feature should be the mark of playing a class. I wish you luck on this endeavor !Here's a list of what I would consider the minimum amounts:
Barbarians only need 1 level to get their key feature (rage), or three if you require a subclass to consider yourself to have played it
Bards are the same, as they get inspiration at level 1
Cleric should be at least two, because channel divinity is a large part of what they are
Druid can be two, because wild shape is the defining feature of a druid.
Fighter should be at least three. I'm not sure about defining features, but those could come from subclasses, which you receive at three
Monk is hard to judge, but either two levels (ki points) or three (subclasses) should be enough
Paladin is a definite level 3
Ranger is either 1 or three, for the favored items or for the subclass
Rogue is three, because of subclasses
Sorcerer is level three, because metamagic is probably the defining feature
Warlock should reach three to be considered played, because by then you have a Pact Boon, Invocations, and a Patron
Wizard should be two, because subclasses are probably the best mark of having played a class?
