This is definitely a silly idea for a thread, but the character in question (or at least what I had planned to do with them) inspired my past two threads about that silly Artificer Barbarian combo, I’ve all but dropped my quest to make that combo work but I haven’t forgotten about it.
anyway, I chose those two classes because I believed that I could reflavor my eldritch cannon (and other infusions) to be a pair of extra limbs, combined with the tail from beast Barbarian and the pair of big meaty claws from Simic Hybrid would give me the most extra limbs I could reasonably get for my character.
why am I looking to maximize limb count? I made this character back when I was putting 13+ hours a day into elden ring and I wanted to make a character with the same aesthetic as Godrick the Grafted. Born into a church of the Centipede-like god of Flesh as their avatar, where grafting on extra flesh and limbs to yourself is considered a form of worship. Which is why I chose artificer instead of cleric, I reflavored the eldritch canon as a grafted on red wyrmling head.
so, I need ideas on a better way to get more limbs that doesn’t involve a weird class dip.
I believe you're reached the maximum allowed under 5E rules already. In fact, you've kind of exceeded it since RAW you can't have your eldritch cannon count as part of you- it's a separate object.

"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.
Wait until spelljammer comes out, and you can be a plasmoid with as many limbs as you like. Though I can’t say how many will be usable until the full description is out.

I’m taking a loose interpretation of the handheld tiny sized canon, if I do get disarmed of it then i think my character will quite literally be disarmed. I don’t know what I'm gonna do with the second canon when I get it because I don’t intend on dual wielding them.

Simic hybrid is my ideal choice because there’s no need to stretch like that for multiple limbs. My character being a human modified with magic flesh grafting wouldn’t really fit with the other plasmid features as much as I love the ooze friends.
If the thri-kreen make it to print, they have 4 arms. (Or, since you said limbs, just pick Centaur.) You gotta learn Mage Hand and Bigby's Hand, obviously, and hunt down the Hand of Vecna maybe? Oh, and take the Witchlight Hand background, because clearly that means you have an extra hand.

So that's objectively gonna be the most limbs you can possibly have (a hundred!), but it'll only work for a certain duration. Now, I'm not sure, but I think there's a way you can keep your Astral Self arms when you Wild Shape, so now you have 102, and maybe other stuff can stack on as well.
If you're a Druid, you'll eventually be able to Wild Shape into a giant centipede. So that's objectively gonna be the most limbs you can possibly have (a hundred!), but it'll only work for a certain duration.
To be that guy...centipedes never have 100 legs, they have to have an odd number of pairs :p They have between 30 and 300 legs.

What about a 3-level dip for astral monk arms? You could probably find a way to reflavor it to make it not astral but temporary grafts or something.

Bear in mind Astral Self grants you a genuinely unknown number of arms - you'll have to ask your DM how many you get. The other downside is that the arms won't do anything you expect arms to do - e.g. you won't be able to grapple any additional opponents at once. They'll certainly be visible, though. If all you want is to look like you have a bunch of arms, that's easy to do - e.g. via Disguise Self.

They can summon two additional limbs as a bonus action and deal 2 Monk die of damage and they deal Force instead of Bludgeoning, which could of course be reflavored to Bludgeoning damage instead.

And we can just say it doesn’t have venom in it anymore for health reasons.
Artificers get bigbys hand so I’m covered there. I do need to be mindful of what I dip into because I only have five levels of squeezing room. Beastbarian, astral monk are gonna have to compete for that spot. Probably. I don’t know if any class is worth a two level dip with how wonky I’m gonna have to get with my stats already.
Alter self is going to be useful too. Even if it can’t make new limbs. But I’m sure making them, say, flesh scythes similar to the necromorphs from dead space which sprout out of the body are just fine since they can’t really grab or act like hands.

If you can find yourself a Sibriex, you can submit to their flesh warping to grow an additional tail.
Since you are reskinning things, you could reskin a dancing sword to be like it is being wielded by a new limb.
