My druid joined a clan that gave him a were-dino form with different stats than his firbolg form—different size, strength, melee attacks, etc. What would be the best way, short of creating a completely separate character, to set up something like this in D&D Beyond? I thought maybe a variant subrace, but that would still apply all the time, whereas I'm looking for stats that only apply while shifted. I'm not sure if this is even doable? TIA.
Why not make it a homebrewed monster and just add it to their Wildshape extra area (even if its not a wildshape). This way its easily accessible for them to reference the new stats and attacks?
Different size would only matter in combat, and I don't think you'll be caring much about your carrying capacity during it, so that one you don't need to worry about changing.
For stats, go to your character sheet (or to "Abilities" in the character builder) and put the desired number in "Override Score".
For special attacks or actions, go to the "Actions" tab and click "Manage Custom". Once you click on it, select the category of action you wish to create, either General, Spell, or Weapon. Then once that's picked a new action will pop up right above it, click the name (it will show up as "Custom Action 1" under the action category you chose). Then click the "Edit" dropdown, and customize it as you please.
For anything such as resistances, to the right of where your AC is, there's a box called "Defenses", you can add some resistances there. They alas don't give you all the possible resistances that monsters get access to, but it can work to remind you. Anything else I recommend just putting under the "Notes" section under "Other".

Another way to do this is to create a custom magical item that applies the requisite changes that you just equip when you shift.
