I'm kind of at my wit's end here. I've been trying to make a caster subclass for the blood hunter and I keep running into the same issue.
My subclass only has 2 known spells when it's activated, compared to the Eldritch Knight and Arcane Trickster, which have 3.
I've created copies of the EK to look at it, and even copied all the settings and text into my subclass. I don't get it -- I can't see where the extra known spell is coming from.
I couldn't tell you for sure, but it may be because Order of the Profane Soul, the Bloodhunter third-caster pact magic subclass, gets just 2 known spells. The number of known spells/cantrips might be tied to the class itself, not just the Spellcasting feature; for one thing, Eldritch Knights get 2 cantrips while Arcane Tricksters get 3 (the third has to be Mage Hand, of course, but that could be the reasoning.)

I was wondering that as well, and it looks like that's what's happening... which is really annoying.
Doing a little more testing, it looks like at least the Fighter and Blood Hunter have only one spell progression implemented. Regardless of whether you have Spellcasting or Pact Magic as the class feature, the Blood Hunter uses the Warlock progression and the Fighter uses the EK Progression.
