I want to give a shout out to the designers for the new monk in the ua it actually looks pretty cool and the idea of mystic brews is pretty awesome. for the breath weapon id allow for changing the elemental types or at least 2 options and maybe add more brews but it actually looks pretty cool and adds some new flavor to your monk. I know i can be pretty critical sometimes so its only fair to shout out credit when I see good stuff.
I partially disagree. I think the brews are great in theory, I am not sure about the execution of them. You only get the one so you are very limited and if you pick wrong, you are out.

You can only keep one bottle of Mystic Brew on-hand for later use. They normally require 1 minute to drink (so you can't do them in combat), and normally last 1 hour.
If you have enough prep time, you can use the "Enhancing a Magical Beverage" feature repeatedly to make the effects last 8 hours. The beverage vanishes if you finish another Long or Short Rest. The effects do not. If you knowingly have five hours before you are going into a dangerous situation, you can Enhance Brew/Quaff/Short Rest repeatedly, and be under the effects of all five Mystic Brews simultaneously.
That said, I think Level 6 Tipsy Sway/Redirect Attack is mostly not worth it, unless the potential damage of the missed attack is enormous. The base Monk Deflect Attacks ability seems too useful to use to defend against attacks that actually hit the Monk to risk burning a Reaction on an attack that initially didn't hit anyone.

I like the idea, but the brews need some work imo. At least cinnamon dragon lasts 1 hour so you get multiple shots per use unlike the really really bad and needs a errata warrior of elements elemental burst. But the other 2 resistance to radiant/psychic or a martial art die more healing. Holy crap those are bad. The level 11 ones may be worse, blue lightning has some synergy with tipsy sways redirect attack so maybe its worth it, but its not a improvement over the level 6 ones. Oh and they need to stop with the bottle disappearing, I'm sure that is designed to stop some exploit but find another way, no one wants to carry around 100 bottles.

If you want to use Cinnamon Dragon, why would you just make the 1-hour version? You're not going to be drinking them in combat anyway, they take a minute to quaff. So use this feature:
Enhancing a Magical Beverage. When you create a magical beverage, you can expend 1 Focus Point. When you do so, the benefit’s duration extends to 8 hours.
In the morning when you end your Long Rest, spend the Focus point to brew the 8-hour version of Refreshing Dip. Drink that. Then Short Rest, and spend the Focus Pont to brew the 8-hour version of of Cinnamon Dragon. Drink that. Short rest again if you have time, if not, being down a single Focus point isn't that big a deal.
Now you've got at least 6 hours of both effects running.
For Refreshing Dip, Get a Goodberry off the party Druid (Or pick up Magic Initiate: Druid, or acquire or fabricate an Enspelled Staff with the spell). For you, they're now each healing Martial Arts Die +1 per bonus action. Consume them during a Short Rest, and that's 10(dMA)+ 10 of post-battle healing without even touching your Hit Dice.
You probably won't be able to convince your DM to believe "when spending multiple Hit Dice during a Short Rest, each Hit Die expenditure is a different 'Regain Hit Points' event," though.
With Cinnamon Dragon... Yeah, it's nowhere near as good as say, Fireball. Not really intended to be, it's a mooksweeper. And it's fire damage, which is a decently-resisted type. But at 4dMA + Poisoned 1 turn / Save for Half w/ no Rider, if the targets are not Fire Resistant or Immune, it's basically like hitting them with a Martial Arts Unarmed Strike, so if you can pack 2-3 foes into your unwieldiy cone, it's more raw damage than taking the Attack Action., though admittedly, not focused-firing on one target.
And unlike the Warrrior of the Elements Elemental Burst (which costs 2 Focus Points per use), Cinnamon Dragon only costs you 1 Focus Point, spent before you decided to go adventuring, to allow you to do this every single turn for 8 hours straight if you want to.

Personally, I thought this incarnation of Drunken Master looked more like what an Artificer Alchemist could or should be.

It's not my cup of tea, but watching Jackie Chan play the character was enjoyable.
