Currently have a level 3 Kenku Arcane Trickster Rogue with the following stats, Str 13, Dex 19, Con 13, Int 16, Wis 16, Cha 15 with a starting feat of sharpshooter. Planning on doing a 15 Arcane Trickster and 5 Gloomstalker. I know many talk about Assassin/Gloomstalker cause of its alpha strike potential, but I don't expect many situations where I'll get the surprise and not compromise the party by shoving us into combat just for it.
That said, I'm conflicted about how to level this up. Rogue level 4 would give me an ASI so I can even dex out and load one into wisdom for Observant to even out down the road. Rogue level 5 would give me uncanny dodge. Yet starting ranger would give me access to longbows, and eventually fighting style and gloomstalker if I took it to 3 first. I honestly debate whether or not to go to 5 for extra attack, but I don't need it as much since we're using Class Feature Variants. However having access or Pass Without Trace and Hunter's Mark would be useful. I guess I'm trying to prioritize one class against the other.

I would say 5 levels is certainly worth it. Planning to actually hit level 20 in my opinion isn't really worth it unless you are starting near there already. I've been in a game for a year and a half for 1.5 years and we're only just hitting level 15. Plan around when you would actually be playing, rather than some glimmer at the end of the tunnel that you wouldn't have much chance to play anyway.
I agree with the advice of getting to rogue 5. You have amazing stats, so waiting on an ASI probably won't hurt you, but...Level 5 is big for every class and uncanny dodge can quite easily save your life. What role do you play in the party? Do you focus on damage? A little bit of everything?
I say get into ranger as soon as possible and get to lv 5 in that class.
i have myself played a gloomstalker/assassin from lv 1 to 12, and those levels where everyone else has two attacks and you dont hurt a lot. It makes level 5-10 really tricky. For reference I was fighter 1/assassin3 before going gloomstalker5. In retrospect I would go fighter1(purely for con save), then gloomstalker5, then assassin.
Is your campaign even going to get to level 20? Many campaigns end without ever getting to 20.
If you will actually get to level 20, how many sessions will you spend at level 20 before the campaign ends? Worry about how much fun you will have during the campaign. Some builds take so long to come together that you spend most of the campaign waiting for it all to come together. And even if your campaign does get to level 20, your character might get killed on the way to level 20.
Ask your DM first if they allow such multiclass and if they understand what they are about to deal with. I helped my cousin do such a build (Gnome assassin/gloomstalker - with skulker and alert feat which made him impossible to be seen and 90% of the time starts first in the initiative order) and he was bombarded with "You have a broken character comments" from both his fellow players and the DM who agreed initially but then technically forced him to remove the multiclass by nerfing most of his abilities
Gotta say, i was happy when he enjoyed playing it but alas... not all good things last.

Since you're already 3 levels into rogue, I would go to rogue 5 before multiclassing. You're right, the ASI and Uncanny Dodge are very nice benefits.
After that, jump into Gloomstalker, and play it by ear.
