My favorite Tasha's Cauldron of Everything feat is Poisoner. The rules on poison are a little muddy in 5e, but now there is an easy way to get potent poison. If you are an assassin, you will be dealing tons of damage with your Sneak Attack and Assassinate.

I really like the way that Fey Touched and Shadow Touched work, to give a character spells defined by school, not by class, AND to then be flexible about what stat is used to cast it, AND to let you both cast it for free and use slots on it, AND to even throw in a +1 stat as well! Had Magic Initiate been worded that way back in the PHB, or the racial caster feats, I doubt we'd see any where near as much crazy multiclassing as we do, and it would be a muuuuch more popular feat. Honorable mention to Telepathic and Telekinetic for the same reason... a little less flexible, but also great at making anyone feel like a customizable psion not constrained to the casting ability scores that the authors assumed you'd be using.
But Skill Expert takes the cake for me, for being something that almost every character will want in their life. Most characters start with a 17 somewhere, and the freedom to fit Skill Expert in as your one mandatory half-stat feat in your planned progression, regardless of what type of character you are or what mechanic you're building for, is great. How many times have I taken Keen Mind or Linguist, not because I cared about their ribbon abilities, but because I just needed a +1 Int? How often have I pined for a +1 Con or Dex feat that wasn't racial? Everyone wants to have more skills and be better at a skill, so everyone will find it useful. Like the magic feats above, a lot of unnecessary multiclassing over the last 7 years has come down to a desire to pick up Expertise, and the ability to offer that to any character of any class or race should do a lot to put single class characters back in vogue. There are even certain character concepts that were not really very fun to play or natural to progress (looking at you, barbarian grapplers) which suddenly are opened up by making Expertise "not just a Rogue, Bard, or Human/Half Elf thing" any more.
I'm still getting a feel for these compared to older feats. And these are very good at empowering narrow builds, but most aren't as useful to more versatile builds.
That said, the one I am most interested in at the moment is skill expert it might just be better than prodigy as a way to pick up expertise without multiclassing.
I personally like the expanded feats on spellcasting (Metamagic and Eldritch adept). Its a great option for those who don't want to MC but still add some of the flavor of that class.
Hmm... it's a very tough choice between Metamagic Adept, Fey Touched, and Skill Expert. Expertise is always a fun way to define a character, and flexible enough to be a viable choice of half-feat both when UA options are on the table or when you're going strictly by the books. Misty Step is a great positioning tool that a lot of classes would really like to have, and really fun for flavour. And getting even a pittance of metamagic without needing to dip opens up a lot of room for build flexibility. Overall... I think I have to go with Metamagic, though it's a very close call.
I love the chef feat because it such a cute feat to use and i always looking forward to camping or an opportunity to find a place to sit down and cook food for my party members even thought they don't scale in higher levels of play and some tryhard says "ChEf Is NoT a GrEaT fEaT yOu ShOuLd PiCkEd A bEtTeR fEaT tHeN tHaT!!!" For my next character i want to play a alchemist Artifcer with the chef's feat cooking up cookies for my party members!

I'm going to make this way harder than it needs to be.

Misty Step is one of my favorite spells... Top 5... heck, Top 3. If I can get it as a feat for every class I play... I'm on it.

I like Metamagic Adept because it makes being a sorcerer a little easier.
My player has the Telekinetic and Telepathic feats and those are pretty cool.
I like meta magic adept. Because now anyone can cast any 1 spell uncounterable by doing subtle spell metamagic.
a powerful powerful thing to be able to guarantee any 1 spell go off.
