I mean when you gain a number of consumable dice and have different type like you have one d6 Superior Dice and three d8 Superior Dice you can randomized which type you consume and keep track on them, when I last check Superior Technique fighting style from fighter class, doesn't track its consumable dice.

Dice is the plural form of die. You can't say "that's a dice," but you can say "that's a die." Conversely, you can't say "these are die," but you can say "these are dice."
Anyways, from what I've seen Superiority Dice are already tracked. Can you maybe put a link to the character sheet you're using where the problem is?

really? I assume that it wasn't track because of how, Superior Dice/Die works in a fighter class -> fighting style -> superior technique, that you can only track it manually. I don't have Battle Master subclass right now and I am looking to track my dices in homebrew creations.

Second wind is a class feature. Fighting style is an option on a list and doesn't have the same tools as a feature to itself. It is like comparing a page to a book and asking why a page doesn't have a cover.
Basically, DDB was not coded in a very future proof way. When they made the character sheets work for the PHB features, they never thought they would have to make it work for things different that the PHB. None of the PHB fighting styles have a limited uses to track, so there wasn't a problem when they made the fighting style options list incapable of tracking limited uses, until now.
