If you gain the Extra Attack class feature from more than one class, the features don't add together. You can't make more than two attacks with this feature unless it says you do (as the fighter's version of Extra Attack does). Similarly, the warlock's eldritch invocation Thirsting Blade doesn't give you additional attacks if you also have Extra Attack.
Since they do not stack, this is why most people suggest not multiclassing far enough to get two sources of extra attack. So only take paladin to 4 or fighter to 4, but no higher.
All of the classes that gain the Extra Attack feature at some point use the same basic text:
"Beginning at 5th level, you can attack twice, instead of once, whenever you take the Attack action on your turn."
Note that it does not say "you gain an additional attack", it says "you can attack twice"(the Fighter version also states when this increases to 3 and 4 times). So if you gain the same feature from two different classes, you can still only attack twice. Think of it like your Armor Class. You aren't getting two bonuses, you're getting two different features that let you calculate your baseline above the norm.
