One of my Characters is a Victorian Necromacer Pirate Queen who exclusively raises undead dinosaurs. Her first mate? A ghost Plesiosaur!
Having the party tracked and repeatedly ambushed by a small band (10-15 in the band) of Astral Stalkers is a good way to get them paranoid. Works with a lot of Ethereal based monsters as well.
Currently running an encounter in an arena where one of the npcs calls for her goddess to take her spirit as she is torn in half by a werebear and then she is turned into a spawn of her goddess turning into a lovecraftian mass of tentacles and eyes that summons lesser fiends and all kinds of nastiness with it's tentacles
