Okay, I had to look this up because I wasn't familiar with Slaad's. Basically you have to either subdue them and perform brain surgery somehow, or chop their heads open, pull out the gem, and have a healer restore them to life. Unless you just want to collect the gems to resell later or something, in which case... just start killing Slaads. There should be one in each head if you take the time to dig it out.
My DM’s running a Slaad-heavy adventure, so I wanted to try and get a control gem or two. Do you know any low-level spells that can incapacitate monsters such as Slaad? My character is level 3. Thanks for replying.
Proficiency with Medicine would probably help a lot, but there's not a lot that can keep a creature still early on in the game. Your best bet would be to invest in some heavy chains and just have the entire party physically wrestle one to the ground. It would still be really hard and odds are more in favor of you killing it in the process, since you wouldn't have access to high level healing spells to keep it from dying due to amateur brain surgery. Although it also depends on how your DM interprets the creature's description... the gem is only said to be "embedded in the brain", so it's up to your DM whether that means it's buried deep in the brain, or if it's resting on the outside and a lucky axe swing might knock it loose without necessarily killing the creature.
Here's the only tactic I can think of, and it really depends on if your DM will let you get away with it. When fighting the Slaad, declare that you're intending to only knock it unconscious and not kill it. If successful, any damage you do to it after will make it start failing death saves. Each time it does, someone in the party has to cast Spare the Dying on it, which makes the creature stabilize. It's a cantrip, so they can just cast it over and over again. Then get anybody with a really sharp knife and some medical knowledge to start cutting it open and digging out that gem. Once that's done you then have to figure out how to use the Gem (the wording I could find is extremely vague, which probably works in your favor) then heal the Slaad and hopefully it will be your obedient servant after that.
Certain spells can be used to acquire the gem. If the slaad fails its saving throw against imprisonment, the spell can transfer the gem to the spellcaster’s open hand, instead of imprisoning the slaad. A wish spell, if cast in the slaad’s presence, can be worded to acquire the gem.
A greater restoration spell cast on the slaad destroys the gem without harming the slaad.
Someone who is proficient in Wisdom (Medicine) can remove the gem from an incapacitated slaad. Each try requires 1 minute of uninterrupted work and a successful DC 20 Wisdom (Medicine) check. Each failed attempt deals 22 (4d10) psychic damage to the slaad.
According to the Monster Manual, you have to reach into the things brain to get it. So maybe you could go on a salad murder spree. You could also set up a salad farm (like a Minecraft farm). Sorta like what TransmorpherDDS said.
Maybe there is a colony of Mind Flayers who came across a band of slaad. The Mind Flayers and slaad fought each other, and when the mind flayers tried to eat the slaad brains they found the control gems. The mind flayers won the battle and ended up extracting the slaads' gems and now have a small army of evil alien toads.
If the party can successfully raid the mind flayer colony without getting slaad or mind flayer tadpoles in them, they could steal a few gems.
Hi does anyone have any easy ways to harvet Slaad control gems?

Is there any way to get a Medicine bonus or something similar?

There are written rules for this:
