A lot of that increase will be art, because they're going to illustrate all 48 subclasses and many more of the spells than before. So the pagecount doesn't necessarily translate to increased complexity / loss of accessibility.
The <1000 is going to be split across 3 books. The Current PHB is ~320, so it's probably not increasing by that much.
PF2 CRB + Bestiary is >1100, so they're still less than that.
I wonder what they’re planning with “more common magic items”; as they stand I want to say more than half of them are cosmetic things or roleplay props. I’d hope if they’re making more it’ll be utility pieces; wonder if they’re bumping some Uncommons down.

In my opinion the factors that have made 5e so popular are many more than those. And many have nothing to do with core books. Because there are basically much more accessible and/or streamlined systems out there, and none of them come close to the popularity of 5e. In fact I wouldn't say that 5e is an accessible and streamlined system. It is a relatively simple system, but at the same time it is unnecessarily complicated and counterintuitive in many ways. For example, if you want to apply the rules of magic literally, it is confusing and confusing. A lot of people have noticed this while playing BG3 and say "Ohh, the game won't let me do this." And it's not BG3, it's just that magic in 5e doesn't work the way you've been doing it for years. Anyway, what I mean by that is that they really now have the opportunity to make the game much more accessible and, above all, clearer (but not streamlined, since for that they would have to change large parts of the root system).
In any case, keep in mind that there is a bit of a trap in the number of pages that JC has announced, since much of that space is going to be occupied by art.
