Rope trick is a pretty good option. Have the party climb into the extradimensional space and pull the rope in until the victims show up, then drop the rope and hop on out. No sign that anyone is there until you drop the rope.
Dropped in here to say symbol myself, but I see someone got to it first. You can use this spell with a small, lidded box with a wire or string to make tripwire or command-detonated claymore mines.

When your party is able to ambush the enemy, which spells do you believe are most effective?
Probably spells that help set up the ambush or area CC spells. Few good options:
