I might sound stupid but I'm a first-time player playing with a first time dm and I think I'm doing something wrong.
I was under the impression that if I used flurry of blows as my bonus action, I could continue to burn Ki points to add more unarmed strikes and my dm never questioned it but looking at the wording now I feel like I can do at most 2 unarmed strikes, is this accurate?
You can make 4 attacks maximum depending on your level.
Action: attack 1
Extra attack (unlocked at level 5) taken immediately after your action attack: attack 2
Bonus action flurry of blows: attack 3 and 4.
If your level is lower than 5, you can only make 3 attacks maximum. Action attack and bonus action flurry of blow.
You cannot spend Ki points to make more attacks unfortunately. However, you can spend 1 ki per attack to attempt to stun the target, provided you successfully hit them.
"Immediately after you take the Attack action on your turn, you can spend *1* ki point to make two unarmed strikes as a *bonus action*."
Your thinking is correct. Players only get one bonus action per turn and in this case it takes your single bonus action to spend 1 ki point and make two unarmed strikes. You could only do it again if you somehow had access to a second bonus action per turn (looking at you Thief class from Baldur's Gate).

Yep for now. The UA 8 Monk does 5 attacks. Two attack actions and three unarmed attacks from an enhanced Flurry of Blows at level 10. You should ask your DM to let your use the UA 8 rules for the Monk.😊
I have a follow up question, could i stack effects on my unarmed strikes, as an example could i try to knock them prone using way of the open hand and then stack a stunning strike effect on that same blow, in effect hopefully making the opponent need to succeed two saves, a dexterity save or be knocked prone, and then a con save and or be stunned just to insure my blows will have some effect?

I do not see why not it does not say they can not stack and they do not use a reaction which would prevent it.
Speak your dm my interpretation is that you would need to decide what to apply when you hit so you could not attempt to knock them prone and only stunning Strike if they fail but there is enough ambiguity in the whole thing that you should check how it will work on your table.
That’s the bane of being a monk. Ki points draining. At least in UA8 they making some abilities not needing KI. Excited, but myDM waiting to see final release before using UA8 changes.

Jegpeg is correct. You can attempt a stun on any attack including one you try to prone
exciting I feel like that would boost my crowd control capability by a decent amount. I will speak to my dm.
Just be aware you can blow through your Ki points really fast.
