So my DM is using sanity and madness in his campaign. If I cast Protection from Evil and Goodon myself, would that make me immune to a creatures maddening effect if it was one of the types listed?
Madness is a variant rule from the DMG, so it doesn't get callouts throughout the PHB. Under curing the madness, the rule suggests that Dispel Evil and Good could be used to cure it depending on the source, so without RAW that can be used as a sort of precedent.
I would rule that Protection from Evil and Good can protect from the magical madness-inducing effects of fiends and other creatures it works against, but not from the natural madness that might occur from interacting with eldritch horrors and the like.

It seems that Protection from Evil and Good works only for charmed, frightened conditions and possesion.
