According to lore, which of the 14 creature types have blood?
I'm asking because I'm building a dhampir who craves blood (specifically). Would he know (through smell / knowledge) to not bite constructs and undead? Would he know (through smell / knowledge) that humanoids, giants, and beasts have blood in their veins? What about aberrations, celestials, dragons, elementals, fey, fiends, monstrosities, oozes, and plants? Do they have blood? If so, is it red blood or something else?
Just want to lean into role playing and have the character bite creatures that he knows (through smell / knowledge) will help with some healing (if the Vampiric Bite is empowered).
I don’t think there’s any raw on it, more of a what seems likely. I’d agree with constructs and undead not having blood. I’d personally think oozes would not have have blood. Plants might have sap, which from what I remember of high school biology serves a similar purpose, but with a different chemical make up, so it would be for you to decide. I’d think the rest would have blood of some sort. Dragons, devils and angels all have many stories where some of their blood is a macguffin, so I’d say they all do, but I doubt it would be like humanoid blood. To the point it might be a delicacy for your dhampir. Or maybe a poison. Or maybe treat one of them like you like it but it upsets your stomach, like a lactose intolerant person eating ice cream. In the end, this is really going to be a lore question to work out with your DM.

Now I want to play a dhampir that has a specific craving for tree sap, especially from maple trees

It's really hard to say for certain, since the individual creature types often cover such a large range of possibilities. Undead is a good example... there is, conceivably, some blood of some kind still in fleshy undead such as zombies or vampires. I think you could even say that an Ooze might have some fluid that is, functionally, blood, at least as much as a plant's sap might count as blood.
I'd say that the only creature types that basically can't have blood would be Constructs and Elementals. Well, except for something like a Flesh Golem, so I guess it's possible for even Constructs to have blood, so I think this might ultimately be something you need to address on a creature-by-creature basis.
This should probably be in story and lore, not here.
My choices for with blood: Monstrosity, Dragon, Beast, Humanoid, Giant, Fey, Fiends, Plants
Without Blood: Celestial, Abberation, Elemental, Ooze, Undeads (with several exceptions), Constructs.
I would say no to plant "blood." I would put Dragon (true dragons, not necc wyverns dragonells etc), Celestials, Fiends, Aberations and maybe Fey (or maybe the most powerful Fey) in a sort of "spiked" category where something else happens instead of the usual bite hp gain and bonus. It'd vary from type to type and in some cases my result in a table roll. I'd limit the "normal" blood affect to "wordly" targets, "big magic" entities may have unaccustomed effects as a result of biting into more than they can chew, er, swallow.
I remember the original Vamprie the Masquerade had rules for "tainted" blood (human blood that had either drugs or pathogens in it) and I want to say as the World of Darkness expanded there were rules for consuming non human blood. Vampire drinking vampire blood of course was a pretty big deal.
Oh I know, in fact I'm a fiend for sapping the life essence of maples and agave myself, just to name two who bottle well.
But I'm not giving my Dhampyr PCs a forest of d4 "hps and roll anything bonuses" for trees just because they landed on the PETA principle.
I don't disagree at all...said it half in jest...but it could be fun to find a vampire pixie or sprite sucking the life out of all the milkweed and dandelions though. Sounds like a quest for lowbie Emerald Enclave agents or a 6+ age group quest.
...or homebrew something like PC dhampir that used to be fairies get some diluted version of the bite when biting something with sap (like maybe only 1 hp gain / day or something)....just RP color stuff.

There's no reason for a flesh golem to have blood - I suspect the creator would replace the blood with some magical infusion.
Maybe their blood has been replaced with battery acid.
Ichor FTW!

'sap' - similar purpose, just a different name. Craved by vegan vampires.
