I'm currently playing a level 6 rock gnome artillerist artificer. Not sure how long the campaign will last (hopefully a fairly long time), but thinking about taking a 2 level dip in War Wizard (and missing the capstone of Soul of Artifice).
Is it worth delaying artificer progression and getting the benefit of extra spell slots and cantrips? If so, when is the best level to start?
I'd say no. The extra spell slots aren't worth it since you won't be able to do much with them. Once you hit level 11 and get the SSI you don't really need the extra spell slots.

As an L5+ artillerist, there is a very small number of spells you are very good at, and most of them are subclass spells - I do believe all of them are evocation, even the cantrips. Accordingly, war wizard should not be on your short list. Your short list should be three items long (not in any particular order):
Bladesinger will scale with your proficiency bonus, so no loss of utility, and your protector cannon will synergise well with it. No particular synergy with arcane firearm.
Evocation will improve most of the spells your arcane firearm wants you to cast.
Divination is good on literally everyone, including you.
Since you're L6 already, I'd push to 8, then duck out for 9 and 10 if you're doing this. L9 is where the DMG CR hiccup happens and enemies are easier to hit for a level, so around there is a good time to multiclass.
I don't think it's worth it. Every level going forward is pretty damn juicy. Artillerists are such a good little self-contained package of a class.
If more cantrips is one of your driving motivations for the dip, I would definitely talk to your DM about obtaining one of these little beauties: All-Purpose Tool

Yeah, I was thinking that too. I'm really hating the lack of cantrips at the moment, but artificer levels 7, 9 and 11 are really important.
