There is a "override infusion limit" button tucked away in the character sheet itself, but you are still limited to the total number of infusions you have available at that level. Which is fine, I think. Not quite what you are looking for I think, but it is how I did the workaround for a similar feature of my own homebrew.

In the infusion window when you go to apply the infusion while at your limit, right under the infusion name.
