Can these two things be entered somewhere into character sheet? If so, what are the steps to do so and will their stats scale automatically or do you have to do that manually? Thanks.
Extras tab on the sheet. Manage Extras. Can add the Homunculus under Familiar, and Steel Defender under Battle Smith Steel Defender. For me everything works except for their HP calculation, which I had to change/update manually.
It's working fine on mine, under extras. Not able to track hp/damage or auto-roll on-line, but since you can heal or revive after a battle, it's not a huge deal.
Upon further review, I noticed the SD to hit modifier for their Rend ability is off. It should be the same as your spell attack modifier, in my case +6. Instead it shows +4 to hit.
I just edited my bonus actions in the action page to have the correct number. I also included other actions I might want him to take, aid/help, disengage, repair...basically anything I thought of, other than dodge which he does on his own. I put all of it under the title Command Defender.

Can a battle smith artificer have both a steel defender and a homunculous servant or are they forced to choose just one? If both are allowed, would DMs be okay with more than one construct going after character's turn or must there only be one (due to 2024 rules with single bonus action)?

You can have both, but you can't use your bonus action to command them both in a single turn. If you have given a homunculus or steel defender no command, it Dodges. If you are incapacitated, it has more autonomy.
That is not to say they don't have utility even without a command. The Steel Defender can use its Reaction on its own to Deflect Attack on an ally within 5 feet, and depending upon where they are positioned, they can be flanking or acting to shield another ally.
RAW is a little unclear about how specific vs tactical your instructions have to be, so there's a little DM leeway in for example, can you command it on one turn to "stick next to Bob" and have it move on its own based on that instruction, or if you have to use your bonus action to place it exactly each time Bob moves. As a DM I would allow any simple ongoing command that I would expect say a child or a dog to be able to follow but YMMV. I would not allow them to attack without using the bonus action.
These two friends have a lot of utility even aside from attacking that is not obvious on first read.
The latests UA has homunculus as "takes its turn immediately after yours. It obeys your commands (no action required by you)." which suggests it doesn't need any bonus actions to command, assuming that carries over to the new artificer book I imagine you'd have no problem commanding both.

It would seem like this is something DnD Beyond could get right, it's pretty basic stuff.
