It sucks just a bit that Phenax appears to be the only answer in the obvious and mechanical sense. However, there's a few that could be justified but their all a stretch.
Thankfully, a bard can find their "muse" in a great many different deities in Theros.
Ephara, who is the goddess of civilization, actually would support many bards, if for no other reason than her civilization & order she brings allows art and culture to flourish.
Iroas is the valiant god of war & victory...and thus, many Sword Bards or Valor Bards would find favor with him. Win glory & victory, and write songs & stories about your exploits!
Keranos is a god of storms...but also inspiration: a Lore Bard who uses their mind decisively, and is disciplined, would find his favor. So no waffling...and, you could use your extra "Magical Secrets" to take storm-related spells (Lightning Bolt, Thunder Step, Destructive Wave, etc...). Maybe Keranos struck you with inspiration once before; and now you're waiting for his next blessing, because you've run out of ideas!
In a similar vein, Kruphix is a god of mysteries & knowledge...also perfect for a Lore Bard: seek knowledge, unravel mysteries, and perhaps your god will whisper to you! Alternatively, an Eloquence Bard might flavor their "Unsettling Words" as crippling secrets they whisper to their target...likewise for a Whispers Bard, I suppose.

I am trying to create a bard for a Mythic Odysseys campaign, and am debating on which god I should use for his piety.

Purphoros is the god of creation and artists iirc.
