I bought xanathar's guide to everything for the subclasses and such but specifically the celestial warlock. I got to make a character and I level them up to level 3 and when i go to pick my subclass it's not there. Please Help how do I make a celestial warlock.
You have probably selected the 2024 Warlock class rather than the 2014 one. As I understand it, subclasses that were built for the 2014 classes won't work with the 2024 classes. Think of the 2024 classes and 2014 classes as separate and distinct classes so that they each have their own subclasses available. Xanathar's subclasses were built for the 2014 classes and if you have inadvertently selected the 2024 Warlock, they won't be available. Try using a 2014 Warlock to see if it works any better.

The only workaround is to copy the 2014 subclass, make a new 2024 Warlock subclass, and copy all the features (ensuring all relevant level 1-2 features are now at level 3 instead).

It should not. The 2024 version has a couple of feature changes that set it apart from the 2014 version.
-Flaming Sphere was replaced with Aid in the subclass spells -Flame Strike was similarly replaced with Summon Celestial -Searing Vengeance was expanded to be able to be used on allies
That said, not having the 2014 options available is in line with what has been stated the entire time: While a 2014 character can be played with the 2024 rules, 2024 characters are required to use all updated content where it's been updated. If they made the old subclasses available alongside the new subclasses with the same name it would also cause confusion.
