When creating an Eldritch Knight or Arcane Trickster you should only have access to Evocation/Abjuration or Illusion/Enchantment spells respectively. However spells that aren't of those schools are selectable from the UI even if you're not 8th level to select spells from other schools.
This is a known limitation of the system. Both classes have the ability to choose a spell from any school when they choose this subclass, and both are allowed to trade out that spell from any school for another spell from any school. The system isn't smart enough to know if you're doing either of those things, so it gives you free reign, and trusts that you know and will follow the rules for your subclass.
