I have a druid who gets a bonus cantrip, a cantrip that you can use as a bonus action. So, my quarterstaff does 1d6+2 damage, but with Shillelagh I think it has a bonus that sets it to 1d8+2? Since it's a bonus action though, do I get to do 1d6+2 with quarterstaff than another quarterstaff attack with 1d8+2? I'm a little confused about how it works.
Shillelagh does not grant an attack, it just changes the properties of your staff. Other than the d8, it also lets you use your wisdom bonus, so if you have Strength 14 and Wisdom 16, it would change from +4 to hit/1d6+2 damage to +5 to hit/1d8+3 damage.
So, does that mean since cantrips can be used at will at the cost of an action, and me having it as a bonus, can I just keep using shillelagh every turn so I always have 1d8+3 rather than 1d6+2 for my attack? As I have 14 strength and 16 wisdom

It lasts for a minute so you generally only need to cast it once per combat, but yes, there's nothing preventing you from just keeping it on.
