For some reason the Aarakocra character I just built is stuck at 5' for flying, walking and every other kind of movement.

Even when I click in to override it, and apply, it doesn't fix it. 

Anyone else having this issue?

You may be encumbered. Try turning off encumbrance rules on the first page when editing your character.

I've never run into that before. The characters only have their starting equipment... seems odd that the default would encumber you doesn't it?
