I don't know if it showed the level 6 kensei weapon selection when my monk was level 6-10. It probably did. Right now my monk is level 16 and the Features & Traits tab shows only the level 11 kensei weapon selection, not the level 6 one. I suspect it's because the features have the same name, so only the latest one is properly displayed. Both are visible in the "Manage Character" space, and it appears both are correctly applied to the weapons equipped (they use the correct damage dice).
