I created a new character using the basic, standard character creation, with "Legacy" disabled. This character has the Elf->High Elf species, and according to "Elven Lineage" at level 1 this character should know Prestidigitation, which can be swapped out every long rest. The first drop-down under "Elven Lineage Spells" is to allow you to choose the spellcasting ability for your species spells. Once you select that, the spells will appear on the character sheet.
For the High Elf lineage specifically, since the cantrip granted is variable, you also have to select the one you want from a second drop-down. However, that drop-down will not appear until you've selected the spellcasting ability.
So does this mean that every long rest you want to change your cantrip, you have to go into "Manage" for your character rather than being able to change it in "Manage Spells"?

Yes, that choice is made in the character builder, not on the character sheet. “Manage Spells” on the character sheet is for managing the spells you get from your class.

Although I dislike the way this is implemented (I should be able to swap lineage cantrips from the character sheet, either as part of the long rest or separately), I knew I could change it from the "Manage Characters & Levels" page. The problem was that even when spell casting ability was selected, with the cantrip (Prestidigitation) also selected, it was not appearing on the Character Sheet at all. This appears to have been fixed, however, within the last 12 hours or so.
I also dislike the fact you have to go into character builder simply to change the cantrip. It should show cantrips that you "prepare" like any other spell you have at your disposal.
