Tell me why when I delete the 1 that I accidentally entered in the override maximum health box, it re-enters it immediately upon closing the manage health screen? This is incredibly irritating, as now I need to manually calculate my total health and enter it in the override slot instead of just entering the amount that I rolled.

Are you using Fixed or Manual HP on the character sheet settings? If you're using Fixed, it's going to default back to the Fixed settings, which is the high side of average + Con. It's not recommended to use the Override Max HP box for that. Instead, set the HP setting to Manual, and each level, go in and add to the Rolled HP box under Manage HP (Class tab).
I've run into this same glitch with one of my players ButWhyTho42. Our table uses Fixed, and I've tried switching back and forth between Fixed and Manual to see if that will reset it, but the HP Override keeps going back to 1. Switching it to Manual for now and overriding with what it should be, but hoping it's fixed soon so I don't have to keep this front-of-mind at each level up.
