I have a level 4 Paladin I am trying to add a feat to their character sheet on DnD Beyond. The option for Eldritch Adept is missing. I have turned off prerequisites and refreshed but it still doesnt appear on the drop down options.

The Eldritch Adept feat comes from Tasha's Cauldron of Everything. To use any content from that book in the character builder, you need to make sure that the "Expanded Rules" option is checked on the Home tab.
I have the same issue and I have expanded rules selected.
I do however have options available where I do not meet the prerequites (despite have use prerequisites selected) for example misty visions should only be available to level 2+warlocks and my character is straight paladin.

The feat was written for the 2014 Eldritch Invocations feature, in which Misty Visions didn't have a prerequisite. D&D Beyond hasn't updated their version of it to work with the 2024 invocations. It's not clear whether they're planning to do so.
