When I take a long rest my hp reverts to “fixed” amount not my manual rolled amount. Every time I need to then go back and do an override. Any ideas?

Are you using the Override Max HP feature? Make sure, in your character settings (under Manage), Hit Point Type is set to Manual. This is the correct way to use rolled HP.

Once it's set to Manual, you should also be setting it through the "Manage HP" button in the builder's Class tab.
