This is for new characters - I am only seeing what is in the 2024 Core Rulebook. I have access to all mainsteam core and extended rules, both 2024 and 2014.
For older characters, I can see Subclasses I used previously, but if I want to change them, the list is extremely limited.
You presumably don't own the books, but have them shared with you. That means you can only use them within the campaign in which they're being shared. (If you then remove them from the campaign, they keep what they have, with a couple of exceptions.)
Also, if you do have Tasha's, but aren't seeing the subclasses, you're probably making your character with a 2024 version of the class, and the subclasses you were expecting were updated, so you have to use the 2024 version. Scrolling down in class selection to pick the legacy version will let you use all the subclasses (If you have the book.)
I’m actually having a similar issue to this. Content sharing isn’t working with new characters I make.
I essentially have two characters attached to the campaign: the one I’m playing, and an unassigned character that I’m using to plan out levels. I can only access shared content with the assigned character, while the unassigned character can only access content that I own. This wasn’t the case in an older campaign with this DM, where I had an unassigned character as a backup, that COULD access the content the DM shared.

You shouldn't be able to edit an unassigned character unless you claim it (assuming you're not the DM which I am based on the fact you said your playing in the campaign). As such, are you sure the character is unassigned and not deactivated? Deactivated characters no longer count towards any content sharing limitations, but also don't get access to content sharing either.
