My group has had this gripe for a while, but it seems like in the encounter builder (using legacy rules) doesn't maintain the dice roll settings the same way character sheets do. It's a minor inconvenience but the lack of continuity for that leads to the assumption from the DM that we can see rolls that we can't. Would be nice to see that fixed to automatically stick to the visibility setting of choice.
