I have only 5.5e sources enabled but I'm getting things like "Bless - Legacy" enabled by default with no option to remove.

Underneath the spell name, it should say where that spell came from. What does yours say?

Also if you click on the spell, which field does it have: Source or Version? Source means it's an official spell; Version means it's a homebrew one that was likely misconfigured.

Keep in mind, too, that those toggles only control what can be newly added to the sheet. Turning them off won't remove anything that had been added already.
