The background has no options for the varrent.
To use the variant you may select "Custom Background" from the list, choose the feature for Guild Artisan/Guild Merchant, and then apply the other proficiencies provided by the variant in the boxes given as options. :)
Its weird that we have to do this manually when the noble and knight are separate backgrounds.
