Creating a homebrew monster right now. When selecting "Fly" as speed type, the movement speed appears in the stat block, but not the word "fly". Pretty odd.
The format that Wizards of the Coast uses for monsters with no walking speed, but with a Fly speed is to have the first speed at 0, before setting the Fly speed. If you add a walk speed of 0 and then your Fly speed, you should see the statblock display in a way that matches the official content.
